Hello hello hi,

March is here and with it hopefully brings some much needed light.
Today is obviously my favourite holiday of the entire year - pancake day. Usually I’m a die hard dropped scone gal (Scottish through and through). However this year I’ve gone rogue - there’s a crΓͺpe! So whatever your pancake preference, hopefully there’s something in this newsletter for you.
This month we see some signs of Spring creeping in, with the appearance of wild garlic. Yorkshire Forced Rhubarb is in full swing but won’t be around for long so make the most of it!

La CrΓͺpe

A crΓͺpe is merely a vessel for the goodness that is lemon juice and sugar - there I said it! Just kidding, it’s a firm pancake day favourite. The additions to the crepe are endless! Try keeping it seasonal, eating them with slices of blood orange and mascarpone - find the recipe here.
 

Makes 10 Crepes

Ingredients:
125g plain flour
1 tbsp caster sugar, plus extra to serve
1 egg
300ml milk
50g of butter, plus extra for greasing
ΒΌ tsp vanilla bean paste
Lemon for serving

Method:

  1. In a small pan, melt the 50g of butter then leave one side to cool slightly.

  2. Sift the flour into a large bowl, alongside the sugar and a pinch of salt. In jug, beat the egg and combine it with the milk and vanilla.

  3. Slowly add this liquid to the dry ingredients, whisking all the time ensuring a smooth batter. Once fully incorporated, whisk in the melted butter.

  4. Heat a frying pan (roughly 20cm) over a medium heat and grease thoroughly with butter - when hot, add a half ladleful of batter and quickly tilt the pan allowing it to coat the base evenly.

  5. When the edges start to turn a golden brown, flip the crepe using a palette knife or fish slice…or gravity if you’re feeling brave and give it a few seconds on the other side, until it’s coloured a little.

  6. Serve immediately with a squeeze of lemon and a sprinkling of caster sugar.
 

The Bannock

A β€˜fly cup and bannock’ that’s what you’ve got this month. It wouldn’t be pancake day without the good old bannock, AKA the dropped scone, AKA a Scottish pancake. Always a spreading of butter and a spoonful or two of jam, washed down with a cup of tea. Feel free to jazz β€˜em up though. Find the recipe here.
