Hello hello hi,

What’s the ultimate expression of love? It obviously lies in a McDonald’s breakfast, right? And more specifically the hash brown. In this month’s newsletter, we give a nod to the ol’ v-day. Breakfast in bed is the best, so whether it’s a significant other, a loved housemate or just your ma, show them some love this Valentine’s. Make them the ultimate Winter hash brown - top with a fried egg and add some bacon (or mushrooms if you’re keeping it veggie) and deliver to the duvet.
Alternatively, crumpets. They’ll get you some brownie points for sure.

Winter Hash Brown

Parsnips aren’t just for Christmas - they’re still going strong right through to the end of winter, so give them all of the love they deserve. A hash brown is clearly the best part about any breakfast - and call this a wild claim, but I think addition of parsnip makes it better!? - find it here.
 

Serves 2

Ingredients:
225g potatoes - Maris Pipers work best
125g parsnips
1 egg, beaten
1 tbsp plain flour
Butter and oil to fry

Method:

  1. Using a box grater, coarsely grate the potatoes and parsnip into a clean tea towel (I like to leave the skin on). Squeeze the grated roots in the tea towel to remove all excess water.

  2. Place in a large bowl, season well and add the flour and beaten egg. Bring together with a wooden spoon.

  3. Heat a large frying pan, add a knob of butter and a little oil (the oil will stop the butter from burning) 

  4. Split the mixture into four. Shape into rounds, roughly the size of your palm. 

  5. Fry on each side for roughly 4 minutes, until golden and crisp.

  6. Serve topped with a fried egg and some bacon, or mushrooms to make it veggie-friendly. 
 

Crumpets

Making a crumpet for someone you love is a pretty nice thing - Valentine’s sorted. Flood it with butter and add a big dollop of jam. Or one step better? A total February treat, make the most of the short season by jarring the winter gold and make some of your own marmalade. I always swear by Delia when it comes to this prized preserve. Find the recipe here.
